Nightshade free meals

Have had allergy tests with a view to curing my rheumatoid arthritis.

Need to avoid for 3 months nightshades, grapes, soy and other pulses, some nuts

but not cashews and almonds.

Am finding meals a real struggle as I get bored with just vegetables, as much as

I love them.

Does anyone have any suggestions, dinner is the worst.

Avoiding these foods along with being gluten and dairy free is really difficult.

I am missing my potato, tomato and tofu heaps.

TIA

Sweet potato, yams and winter squashes work well in any recipe that uses

potatoes. Grated beets (raw and/or cooked) work well instead of tomato.

The flavours are all a little different of course, but they are excellent

nutrition and your immune system will appreciate the break. :-)

Have you looked at " raw food " websites and recipe books? They will

not have very much gluten, soy, pulses, or potato. They will have a

good number of nuts, which you can sub seeds or your legal nuts.

You'll need to watch for peppers, tomatoes, eggplant, etc. but If you

can cut the major allergens out, that will be a help.

Here are some nightshade free recipes you might be able to use/modify:

Some other cuisines to look at might be vegetarian sushi, Indian (see

spice mixtures here:

t-yogurt.html),

smoothies.
