It didn't thicken at all. What gives? I know it's a sign that it's just yucky and I shouldn't feed my kids like that ) But I want to know why it didn't set. Guest guest Posted September 10, 2009 Report Share Posted September 10, 2009 You will probably have better luck with a " cooked " pudding mix rather than an instant, which generally doesn't work with rice, soy or other alternative milks. Or there are puddings that use silken tofu or avocado for the base. Sometimes it will work with REALLY cold coconut milk, but usually not. Cooked puddings do alot better using alternative milks. However, most commercial pudding mixes are simply cornstarch, flavour, sugar and sometimes colour. Just an FYI, my husband got some jell-o instant chocolate pudding on clearance at Liquidation World this past week. He made it with tinned coconut milk in a glass jar which he had to shake for about 30 minutes. He tried the second one using a whisk and cut his mixing time to 10 minutes. Both times he was pleased with the outcome, but not with the length of prep time. I am sitting here with a box and I seriously can not figure why it's not veg/GF. Another search had me find this: http://www.celiac.com/gluten-free/lofiversion/index.php/t20143.html which indicates that it is gluten free. We're vegan by choice, but my girls need to eat gluten free for a reason ;o) So obviously, this important for me to know. I haven't used instant pudding mixes for years, so don't know much about this subject. I do understand your frustration over finding things to feed your kids! Have you tried the Mori-Nu Mates pudding mixes? They set up very nicely. The ingredients are all natural and are vegan. The pudding mix is mixed with one box of Silken Tofu and a little bit of water. They come in chocolate, vanilla, and lemon and are very tasty! Most health food stores carry this brand. I like that they contain no chemicals nor refined sugars. There is nothing in the pudding mix which could be gluten but gluten is used in the plant so there is risk of cross contamin.
