pudding help

I have kids who like treats now and then, so

I made some instant jello pudding the other night

using oat milk. It didn't thicken at all. What gives?

 

I know it's a sign that it's just yucky and I shouldn't

feed my kids like that :o) But I want to know why

it didn't set.

You will probably have better luck with a " cooked " pudding mix rather than

an instant, which generally doesn't work with rice, soy or other alternative

milks. Or there are puddings that use silken tofu or avocado for the base.

Instant puddings need the fat of cow's milk to set up properly. Sometimes

it will work with REALLY cold coconut milk, but usually not.

 

Cooked puddings do alot better using alternative milks. However, most

commercial pudding mixes are simply cornstarch, flavour, sugar and sometimes

colour.

 

Just an FYI, my husband got some jell-o instant chocolate pudding on

clearance at Liquidation World this past week. He made it with tinned

coconut milk in a glass jar which he had to shake for about 30 minutes. He

tried the second one using a whisk and cut his mixing time to 10 minutes.

Both times he was pleased with the outcome, but not with the length of prep

time. Personally I would just do the cooked pudding from scratch so I can

control what goes in it and how it's sweetened and flavoured.

I made Jell-o pudding with almond milk. It was a little liquidy-er (is that a

word?) but my family really liked it. Good luck!

No, not if it is Jello brand. There are some vegan and gluten free

pudding mixes available at the health food store, but I don't think

they require dairy milk to make them thicken like Jello does.

Are you serious? !!! ?

 

What ingredients would be non-vegan or have

gluten in them? I am sitting here with a box and

I seriously can not figure why it's not veg/GF.

 

I'm still new to all this label reading, and admit

to making some mistakes now and then - but

my whole family read this label. Help me figure

this out please, LOL.

OK, so according to peta - the Jello brand pudding

flavors I have (pistachio and vanilla) are vegan.

So what ingredient would contain gluten is my question?

 

Another search had me find this:

which indicates that it is gluten free.

 

We're vegan by choice, but my girls need to eat gluten free

for a reason ;o) So obviously, this important for me to know.

It seems that Peta would be a reliable source. I haven't used instant

pudding mixes for years, so don't know much about this subject. I do

understand your frustration over finding things to feed your kids!

 

Have you tried the Mori-Nu Mates pudding mixes? They set up very

nicely. The ingredients are all natural and are vegan. The pudding

mix is mixed with one box of Silken Tofu and a little bit of water.

They come in chocolate, vanilla, and lemon and are very tasty! Most

health food stores carry this brand. I like that they contain no

chemicals nor refined sugars.

Last I checked with the manufacturer they were gluten-free but not able to

commit to it because they do not test for gluten. There is nothing in the

pudding mix which could be gluten but gluten is used in the plant so there

is risk of cross contamin.

Aren't the Dr. Oetker Organics also vegan (when made with a milk sub) and

gluten-free?
