Camping Food & Granola

Hi Everyone,

We are planning a 2 week camping trip and I figure I'd better take most of our

food with us.? Does anyone have any good ideas for camping food?? We will have a

little propane stove with us.

 

I was thinking granola and granola bars would be a good breakfast cereal.? There

was a recipe that looked good that I saw in a library book.? It was either " The

Gluten Free Vegan " or " The Gluten Free Vegetarian Kitchen " ? (I'm inclined to say

it was the latter.)? Does anyone have these books to give me the granola

recipe?? (It used puffed rice as a base for the granola.)? Any other good

recipes would be greatly appreciated!?

I camp all the time with our kids.....you can make cream of rice cereal and add

fruit, honey, granola, whatever you can eat for breakfast--or a tofu

scramble......even in the great outdoors you can make almost whatever it is you

can make at home--we tend to make alot of vegetarian soups and stews, with great

success, even with my Venture Crew comprised of kids who'd rather just put a hot

dog on a stick over the fire..........our current trend is to make healthier

dishes using more vegetables---we are using some meats and just making sure

there are meatless options (cooking meat separately sometimes) for the

vegetarias/vegans in  our group.   Pasta dishes are easy to make also in the

great outdoors.....I personally love to make a gluten free pancake w/choc chips

served with fresh fruit with a good tea.....next weekend!!!!

Hi Alina,

 

We love camping and we are gluten free, but we haven't let that stop us. I take

an ice chest, and my propane stove and I cook food. I close my mind to what is

traditional camping food, and think about what we eat at home, and then I pack

the trunk. We eat great and enjoy our trip. If it is a road trip it is easier

because we can stop every other day and get fresh produce. We eat salad, we eat

potatoes. I pressure cook lentils and beans. We have granola made at home from

gluten free oats. I make scrambled tofu and fried potatoes for some breakfasts.

I make rice and curry of all kinds. Some of these foods take a little longer to

cook, but I just plan ahead. I am up a little earlier then many people in the

family, so I often make the first meal of the day a heavy meal, because there is

time to cook then, and then we have a snacky meal for lunch if we are hiking or

exploring, and a fruit and cereal supper. If we are on the road, we will stop

at a park or rest area for lunch and I pull out a bag of pre washed lettuce, a

cucumber, tomato, red pepper, green onion, etc and divide it between the

individual salad bowls. I don't eat many bottled salad dressings. My simple on

the road dressing is put straight on my bowl of salad and then mixed in. My

bowls are 5 - 6 cup plastic bowls with lids. I squeeze on the juice from 1/2 of

a lime. Spoon on some tahini, and then sprinkle on onion powder, garlic powder

and salt that I put in little shakers and keep in a ziplock bag. Divide a can

of olives among the family and a can of garbonzo beans. Stir, and I've got lunch

ready in 5 - 10 minutes. I keep fruit, and nuts on hand for those who want a

little more. Sometimes my growing boy eats a can of beans all by himself.

 

I know no everyone eats like we do, but may be the main idea will help: eat

what you eat at home.
