I have quinoa and I have a flour mill, so I could easily make quinoa flour if I had the right recipe. I broke my toe today, so I've been hobbling around with a purple-grape-like swelling on my driving foot, but I still managed to make a batch of barley tabbouleh. I use the excellent brown rice tabbouleh recipe in our files but I substitute barley. Quinoa is very high in protein. Kathleen I've seen recipes that call for it and then say it is free of grains. Can something be substituted for it? Anyway, that was organic. They had it in bins for a much lower price and I didn't need very much. I don't know if that helped any, but I suppose there's always grinding your own, which I've never tried.
