My pastor's wife gave me a recipe for butter using millet but I haven't had the time to make any. I saw the EB at the store and thought I would save time. My son is not happy to be using it. Oh well. It is the first step in df for butter substitute for us. One step at a time. We cut out every thing else a long time ago, but not butter. We wouldn't use margarine since I had heard it was so bad for you. So I had no knowledge of anything else. Then last month my Pastor's wife gave me the recipe. Guest guest Posted November 15, 2009 Report Share Posted November 15, 2009 sorry if this isn't new info (I don't keep up with the threads very well) but I've been using expeller-pressed coconut oil (I think that's the kind, the kind that doesn't taste like coconut, which I hate) in place of butter, even on bread. It works great. I lightly salt the tops of bread after " buttering " . It's great on potatoes, squash, etc. I find it quite satisfactory overall. Guest guest Posted November 15, 2009 Report Share Posted November 15, 2009 I think it is debatable whether margarine or butter or really any of the " hard " fats are " good " for you. Depending on the use, you can substitute with expeller pressed oils, or avocado. For toast, we use flavored olive oils, or just spread avocado on toast. For baking, I use coconut oil - it does lend some coconut flavor to recipes but it is great for baking and you can substitute for any margarine or butter in a recipe. We have not had margarine for about 5 years now - but my family will still buy Earth Balance or Willow Run and GF bread/rolls for us at family get togethers. Good for you for cutting out the butter! EB has recently come out with one tub made from olive oil rather than soy but I have not seen it yet. Cooking at higher temps with EB imparts a flavor I dont care for so I use Smart Balance oil blend which is made by the same company for that. I understand that coconut oil should be organic to remove the residues and therefore in cooking imparts a cleaner taste. Spectrum Naturals is one brand that is also inexpensive. Nutive is another but it is more expensive. Most are not vegan, in fact the newer ones have added fish oils, etc. Usually --- the Smart Balance LITE is vegan --- but always read the ingredients to be sure. I use the Smart Balance® Omega Cooking & Salad Oil  in a bottle - its a blend of canola, soy and olive oils providing 1230 mg of Omega-3s ( veg source) per serving. It is vegan. Guest guest Posted November 17, 2009 Report Share Posted November 17, 2009 I should have been more specific - I use the bottle of Smart Balance Omega oil that is a blend of soy, canola and olive oil. the E vitamin portion of it is made from dl-alpha tocopheryl acetate form which is a man-made synthetic vitamin E not from animals.
