Guest guest Posted November 17, 2009 Report Share Posted November 17, 2009 This year I am going to several potlucks during the holiday season. I normally make some vegetarian dish to take along. Most people enjoy eating it and ask for the recipe. The year before, I actually invented my own recipe. (I didn't write it down :-( ). Last year I visited someone who had the tofurky thing. I thought it was a nifty substitute. But, now that I am trying to go gf, I assume that it has gluten in it. I know most of the recipes I cook do have gluten. So what can I make for a thanksgiving entree that meat eaters will enjoy, my son will consent to eat, and won't be too hard for me to cook? Some ideas: - stuffed squash - a rice pilaf dressing instead of bread stuffing - some sort of mushroom dish - sweet potato with pineapple, and pecans, and coconut topping . . . My problem is transporting anything -already cooked by me -looks perfect -then we drive 45 minutes to my mom so I have to cool it with those blue ice things and after we get there its 2 hrs before we eat because she forgot to put the 20lb turkey on early enough and its not done!!! Her oven and micro are full of their food so no way I can cook mine there from scratch. Every year I have to microwave my food once the coast is clear and everyone looks at it like its shriveled up -which by that time it is!! The one I make for Christmas is also on my website and has step-by-step pictures that can be printed to show you how to make it. There is also a " Special Occasion " folder in the files with all those special recipes and a few menus from members. The files can be found here: Recipes are sorted by category. I printed up lots of information. The tofurky looks great. Looks like it takes a lot of time but I can make it. Here it is, I'm not sure of a gluten sub or what they're called only that I've seen something called " gluten sub " at our local supermarket here in NZ and also in our health shop. I remember wondering what you'd use it for... calls for some experimentation I feel! Bryanna Grogan's Recipe DRY MIX: 2 c. pure gluten powder (instant gluten flour; vital wheat gluten) 1/2 c. full-fat soy flour or chickpea flour 1/2 c. nutritional yeast flakes 2 tsp. onion powder 1/4 tsp. white pepper WET MIX: 12 oz. firm regular (NOT silken) tofu 1 and 1/2 c. water 3 T. soy sauce 1 T. olive oil For the Wet Mix, in a blender, blend all the ingredients until very smooth. Put dry ingredients in the order stated in the bread maker, then pour blended smooth wet mix mixture on top into the bread maker.  Put it on dough cycle and turn it on. NOTE*: You can knead by hand, too, but it's tougher than bread dough. You may want to let the seitan dough sit for a while to soak up the liquid more thoroughly before you start hand-kneading.) The dough should be quite shiny and smooth. Avoid breaking it up when you take it out of the bowl. Take out, and cut in half, roll out each half with a rolling pin (it takes time because it springs back to shape) so roll for a few minutes until you get a flat, oblong shape. Do one half at a time. Make up a stuffing mix of your choice.  Then take half the stuffing mix and press flat onto the oblong shape and then roll it up into a log. Seal the edges really tight by squeezing and squeezing (this is important otherwise the liquid gets in and it puffs up), it takes a few minutes by just pinching it together to seal. Do the other oblong with the stuffing and roll the same. Place each log in its own oven bag. Make up 2 cups of fake chicken stock (massells) use 3 - 4 tsps of the chicken stock powder to 2 cups water.  You can add crushed garlic and some herbs to the stock too. Pour 1 cup into each oven bag with one log in each bag.  Seal oven bags and poke a little air hole. Then put both oven bags in a pottery style dish (Metal will brown bottom too much) and cook for 1 hour approx at 160 fan oven Celcuis or until there is only a little liquid in the bottom of each log.  Take out and then refridgerate until morning.
