Guest guest Posted November 19, 2009 Report Share Posted November 19, 2009 I like to make these http://southernfood.about.com/od/nobakecookies/r/bl90710a.htm subbing earth balance for the butter and either rice, soy or hemp milk for the milk, and vegan chocolate chips of course. You can sub agave for sugar but remember agave is sweeter and liquid so you'd want to use less, maybe 2/3 to 3/4 cup, and you may need to cut back on the liquids slightly. I tend to eyeball things and play with it until it looks/taste good. I've made these a few times and they are really good, especially with the peanut butter! Hope this helps you! Guest guest Posted November 20, 2009 Report Share Posted November 20, 2009 Have you seen the cookbook BabyCakes : vegan, gluten-free, and (mostly) sugar-free recipes from New York's most talked-about bakery? I checked it out of the library last month and didn't write down the author. But she uses a lot of gluten-free flour from Bob's Red Mill in Portland, if you're in the U.S. Or you can try pulverizing the oats in a blender to make a more floury texture, which should help with the texture. Did you let your second mixture cool? It should've gotten more solid at room temp. or cooler, since coconut oil and cocoa butter are both solid at room temp.
