The previous days I have slipped up on: - day 1 - salad dressing - unprepared to start soy-free and no time to do anything creative for supper, eating on the run. The following days my salad dressing was pomegranate molasses or a dressing made of lingonberry sauce. yum, and bonus of being fat free! - day 2 - ate out - finished off my son's taco without stopping to think that the beans or rice might have soy in them - day 3 - ate leftover pancakes for a snack, and then remembered I might have used soy flour for an egg replacer in them. - day 4 - yay, no soy! Just about got caught by the cooking spray - in fact sprayed the pan, and then realized and checked the ingredients. Washed the pan and instead started with a few drops of sesame oil. Used avocado in the coleslaw instead of mayo, not bad. Made ahead pizzas for Saturday, and didn't put veggie meat on mine like I did the boys', didn't snack on it or lick my fingers! As well as starting soy free this week, I am also trying to heal an ulcer, which so far means no tomato sauce or salsa, chocolate, hot spices, juice, fruit except in small amounts. But I'm still okay with beans, rice, vegetables, mushrooms, nuts and seeds, so I'll survive. I made roasted red pepper sauce for my pizza instead of tomato sauce, so we'll see how that works, and since my son had requested chocolate muffins for an activity on Saturday, I made pumpkin muffins last night so that I will have something to eat. My husband likes to take it to work. I put the slaw in one container and the dressing in a tiny one. He dresses it when he wants to eat. I caramelize finely sliced onions. bake a head of garlic and either roast a red pepper or dice a tomato. I put the onions and cloves of baked garlic on the base and then top with julienned roast pepper for DH or diced tomato for me. (he does not like tomatoes as they hurt his stomach and I can't eat peppers because they give me joint inflammation) Just before they are finished cooking I top with finely shredded basil.
