Anyone have a favorite recipe, without rice flour? I see the one and only sugar cookie recipe in the files... *We can't do the coconut butter, I think I already asked BL this, but how much spectrum would I use instead? I'm scared to try this recipe and use up 5 cups of flour if it doesn't turn out. Has anyone tried the below recipe? I could also try the Rudolph Cookies in the files without using the Choc Chips & pretzels but it has rice flour. I usually sub rice flour with sorghum but that might be too grainy for sugar cookies???? They turned out great and nobody believe they where gf! I'll try to find it again. I just got a new computer about a week ago and I don't have all my bookmarks switched over yet, so it make take a while to sift threw all the old messages to find it again. Their December magazine issue has cookie recipes for the holidays. http://glutenfreegoddess.blogspot.com (Karinas Kitchen) has many cheat sheets on baking GF. I have had good luck with Bob's Red Mill GF all purpose baking mix and here is their recipe for sugar cookies http://www.bobsredmill.com/recipes_detail.php?rid=122 replacing honey with agave, butter with Earth Balance, and egg white with 1/4 cup soft tofu or EnerG Egg Replacer for 1 egg would make the recipe vegan. I have not made this recipe. If I eat one I eat them all so I dont make these kinds of things much any more. I'm pretty ok with flour and I almost always use Sorghum in place of Rice but in certain instances Sorghum seems to be too grainy. And for the life of me can never remember the spectrum conversion. Guest guest Posted December 15, 2009 Report Share Posted December 15, 2009 The Lewis Family, All the GF flours are too grainy, I think, so I run them thru a dedicated coffee grinder or my vita mix dry container for a few seconds to get them to be a finer consistency - kinda like cake flour looks, which helps. Spectrum shortening can be used cup for cup in place of butter though it wont have that buttery taste that Earth Balance can impart. Maybe using half and half may do it. Â Living Without uses the shortening entirely in their roll out cookie recipe. the December January issue of Living Without has shortbread, roll out sugar cookie dough, ginger snaps and spritz cookie recipes. They use 4 cups superfine brown rice flour, 1 1/2 cups potato starch-not flour, 2/3 cup tapioca starch/flour for their mix to make 6 cups for recipes.
