I am out right now and I don't want to run to the store for just mayo. I thought maybe there may be a recipe someone may have for a mayo sub. thanks maryruth Don't search for the truth in a church. Yield 1½ cups Time 5 minutes Tools Blender or food processorRubber spatulaCovered container Ingredients 1 c firm or silken tofu1 small clove garlic, minced1 t good mustard2 t cider vinegar¼-½ t salt¼ c oil (olive and/or canola) Directions Blend the everything but the oil for a few seconds. Without turning off the blender or food processor, slowly pour in the remaining oil. As soon as it is mixed in, turn off the blender and transfer the mayonnaise to the container. Notes Adapted from Molly Katzen's New Moosewood Cookbook. Guest guest Posted December 20, 2009 Report Share Posted December 20, 2009 Eggless Vegan Mayonnaise RecipeIngredients:3 tbsp lemon juice1/2 cup soy milk1/4 tsp salt1/4 tsp paprika1/4 tsp mustard6 tbsp vegetable oilPreparation:Put all the ingredients except the oil in a blender. Blend on the lowest speed. Gradually - one drop at a time - add the oil until the mixture starts to thicken. Continue blending until thickened and smooth.
