Summer Fruits with Toasted Almond Yogurt

Preparation: 15 minutes + 15 to chill

Cooking: 5 minutes

Toasted Almond Yogurt:

 

4 teaspoons slivered almonds

4 teaspoons dried sweetened cranberries, finely chopped

100 g (3 1/2 oz) soy vanilla yogurt

 

Summer Fruits:

 

1/2 cup freshly squeezed orange juice

1/4 small pawpaw (papaya), cut into 2 cm (3/4 " ) pieces

1 star fruit (carambola), sliced

1 kiwifruit, sliced

100 g (3 1/2 oz) raspberries

1/4 small honeydew melon, cut into 4 wedges

8 teaspoons agave nectar, to serve

 

 

1. Heat a small frying pan over low heat. Add almonds; cook and stir for 2 to 3

minutes or until toasted. Transfer to a heatproof bowl; cool.

 

2. Add cranberries, yogurt and 4 teaspoons orange juice. Stir to combine. Cover

with plastic food wrap; chill for 15 minutes.

 

3. Combine pawpaw, star fruit, kiwifruit and raspberries in a medium bowl.

 

4. Place melon in serving bowls. Top fruit mixture. Drizzle with remaining

orange juice and almond yogurt. Drizzle with agave nectar.

Serve at once

 

 

 

TIP: Make a double batch of the yogurt mixture. Chill the second portion and

use stirred through GF rolled oats with grated apple for a bircher-style muesli.

Right now the snow sounds great!

 

Its quite hot today, as it was yesterday. I don't mind the heat, but it tends to

give me migraines ... so I sit inside with the air conditioner pumping :(
