Guest guest Posted January 4, 2010 Report Share Posted January 4, 2010 Fresh Apricot Salsa 1 cup frozen and thawed -OR- canned -OR- fresh cooked corn kernels 1 small tomato, seeded, finely chopped 2 ripe apricots, halved, stone removed, finely chopped 1/2 medium red onion, finely chopped 1 fresh small red chilli, seeded, finely chopped 8 teaspoons chopped fresh coriander (cilantro) 1 to 2 tablespoons lime -OR- lemon juice 1.
