Guest guest
I have used 3 cups(2 cups) of the bread or cookie crumbs mixed with 1/2(1/3 cup) melted Earth Balance Margarine and 2(1tbsp) vegan sugar (brown or white). I save about 1/2(1/3) cup of it and press the rest into the bottom of the sprayed 13 by 9 pan. I bake this at 350 degrees for 10 minutes. I then put 3-4 sliced peeled apples (that have been simmered with a little cinnamon sugar til soft on stove) over it and dot it with vegan cream cheese and sprinkle the remaining crumbs over and bake for 20 minutes more. I have used various jams and jellies like raspberry, jarred vegetarian mincemeat, canned, jarred or frozen blueberries, peaches, pears and cherries successfully. You can use canned pie fillings if you don't mind all the corn syrup sugar. You are only limited by your imagination. here is a vegan Lemon Bar recipe ( to use the filling recipe) http://www.wasabimon.com/archive/isas-vegan-lemon-bars/ here is a vegan bread pudding recipe from Beverly Bennet the Vegan Chef: http://www.veganchef.com/cinraisin.htm Ten Uses for Cookie Crumbs By Amy Brantley http://www.associatedcontent.com/article/291931/ten_uses_for_cookie_crumbs.html?\ cat=22 let us know how it all turns out Patricia Squyres Marion Nestle's cardinal rules for eating better: Never buy anything with a health claim. It might add a different flavor to a stew as thickening. Worse case might be as crumbs to feed the birds....... .. I used smaller pans and a thermonator and made " white " bread, banana bread and ginger bread for the family which all came out good. Question, the ginger bread came out good but no one really liked it to strong of a taste. Any suggestions on what to do with it.
