Guest guest Posted February 12, 2010 Report Share Posted February 12, 2010 Fruit Bar Crust Source: What's Cooking in the Benton Sister's Kitchen, Vol. 1 3 cups quick oats, gluten free 1 cup unsweetened coconut 1 cup millet (raw, finely ground) 1 cup walnuts, chopped 1 tsp. salt 1 banana 1 cup orange juice Whiz millet in blender and pour into bowl. Blend juice, salt, and banana in blender. Add juice mixture, oats, coconut, and walnuts to millet. Mix all together. Press half of mix firmly into a 9 x 12 inch glass baking dish. Fill with your favorite filling. Top with remaining mixture and bake at 350° for 30 minutes. *For a raw version of this recipe, do not bake. Use a dehydrator or air to " dry " . If it isn't, it is probably cross-contaminated (in the field). I can purchase three different brands of gluten-free oats where I live. I buy them at the health food store and at several of the local supermarkets. One brand is Bob's Red Mill (good, but my least favorite of the three) Another is Gluten Free Oats - www.glutenfreeoats.com I don't have a package of the other brand and cannot remember the name right now, but hopefully someone else here will. My health food store carries them; my Indian market also carries rice flakes as " poha " . My Canada Safeway carries Bob's Red Mill products too. They are tougher than the other brand and don't cook up as nicely. Last summer I kept getting batches that tasted rancid. Even the health food store owner agreed and kept sending them back, but the replacement bags had the same flavor. I'm not sure what the problem was.
