Shez,

 

I'm no professional baker, but from what I've read, coconut flour recipes

usually require a lot of eggs for a few reasons: 1) it naturally absorbs a

ton of liquid and needs the eggs to provide that, 2) coconut flour has no

protein so the eggs provide that and 3) coconut flour is so dense and the

eggs help " lift " it. I think the general rule is one egg per ounce of

coconut flour.

 

I think you'll have better luck finding recipes that use coconut flour in

addition to other GF grains, it's usually used in small amounts like 1/4

cup.

Yes, you're probably looking at " paleo " , SCD, or low carb recipes. Coconut

flour and *lots* of eggs.

 

You can sub small amounts in gluten-free cooking, but not too much because

it does have a definite coconut flavour and I find it to be a very dry

flour.

I have & it is really good. Works well in sweets because of the flavor. Make

sure everyone eating likes coconut because you really can taste it!

I just read something recently that said you can make a one-to-one

substitution for eggs with chia gel. (That's chia seeds soaked in water

until they absorb it all and develop a gel-like consistency.)

 

FWIW, I read that chia seeds have more nutrients than flax.
