Guest guest Posted February 18, 2010 Report Share Posted February 18, 2010 Shez, I'm no professional baker, but from what I've read, coconut flour recipes usually require a lot of eggs for a few reasons: 1) it naturally absorbs a ton of liquid and needs the eggs to provide that, 2) coconut flour has no protein so the eggs provide that and 3) coconut flour is so dense and the eggs help " lift " it. I think the general rule is one egg per ounce of coconut flour. I think you'll have better luck finding recipes that use coconut flour in addition to other GF grains, it's usually used in small amounts like 1/4 cup. Hope that helps, Clara I. You can sub small amounts in gluten-free cooking, but not too much because it does have a definite coconut flavour and I find it to be a very dry flour. (That's chia seeds soaked in water until they absorb it all and develop a gel-like consistency.) FWIW, I read that chia seeds have more nutrients than flax.
