Brown Rice & Macadamia Salad

 

 

1 1/2cups brown rice

1/2 cup macadamia nuts, toasted, chopped

2 green onions, thinly sliced

3 celery stalks, trimmed, thinly sliced

1 large red delicious apple, cored, cut into 1 cm (3/8 " ) cubes

1/2 cup plain SOY yoghurt

1/2 cup mango chutney

4 teaspoons lemon juice

salt & pepper, to taste

 

 

1. Cook rice in a large saucepan of boiling, salted water, following packet

directions, until just tender. Drain. Refresh under cold water. Drain. Cool for

10 minutes.

 

2. Combine rice, macadamias, onion, celery and apple in a bowl.

 

3. Combine yoghurt, chutney and lemon juice in a bowl. Season with salt and

pepper.

 

4. Spoon yoghurt mixture over rice mixture. Toss to combine. Serve.

 

 

Serves 4.
