Guest guest Posted March 11, 2010 Report Share Posted March 11, 2010 Mango Bellinis 1 medium mango, peeled, roughly chopped 8 teaspoons lime juice 8 teaspoons caster (superfine) sugar 8 teaspoons cold water 750 ml (1 1/2 pints) vegan sparkling white wine, chilled 1. Process mango, lime juice and caster sugar until smooth. Add cold water. Process to combine. Pour mango mixture into ice cube tray to fill. Freeze for 3 hours or until firm. 2.
