Guest guest Posted March 13, 2010 Report Share Posted March 13, 2010 Green Bean & Dried Cranberry Salad 800 g ( 28 oz) green beans, trimmed 1/2 small red onion, thinly sliced 1/2 cup dried cranberries 1/4 cup slivered almonds, toasted Red Wine Vinegar Dressing: 1/4 cup extra-virgin olive oil 4 teaspoons red wine vinegar 1 teaspoon caster (superfine) sugar 1 garlic clove, crushed salt & pepper, to taste 1. Make dressing: Place oil, vinegar, sugar and garlic in a screw-top jar. Season with salt and pepper. Secure lid and shake to combine. 2. Bring a saucepan of water to the boil over high heat. Cook beans for 3 minutes or until just tender. Drain. Refresh in a bowl of iced water. Pat dry with paper towel. Place in a large bowl. 3. Add onion, cranberries, almonds and dressing to the beans.
