The commercially available ones all have stuff I can't have like rice or walnuts or cornstarch! I tried making one with sesame seeds and nutritional yeast and it was horrible! Anybody have a really good recipe? I'm trying to limit soy too as it's starting to cause some digestive issues as well. *sigh* Recipe sounds good though. Guest guest Posted March 15, 2010 Report Share Posted March 15, 2010 Vegetarian Express Parma Zaan Sprinkles has almond meal/sea salt/nutritional yeast/dehydrated onion/citric acid --thats all --tastes very good I get it by online ordering thru Vegan Essentials or Pangea about $7.00 for 6 oz And it lasts a while. If I run out I make similar Trader Joes carries finely ground almond meal (you could do it yourself- adding minute amounts of potato or similar GF starch to keep it from clumping) and I mix 1/2 cup with 1/4 cup nutritional yeast -then taste it. Guest guest Posted March 15, 2010 Report Share Posted March 15, 2010 I make one with equal parts raw cashews and nutritional yeast flake - then put it in the vitamix with a bit of salt until it is about the texture of sand. Most of the time I add some dried italian herbs to it too. We love it on everything from popcorn, pizza, potatoes, etc. It does not cook the same as parmesan cheese though in recipes so you have to alter non-vegan recipes more than just replacing parmesan for a vegan parmesan (in my experience at least). So far the cashews are not wrecking havoc in my system (knock on wood). It's difficult cooking/baking with cheese alternatives. I usually add a little olive oil to most things. I think oil helps, usually! And herbs are a great idea! I hadn't thought of that! I will definitely try it out! Thanks!
