Guest guest Posted March 30, 2010 Report Share Posted March 30, 2010 So we ended up making this matzoh recipe (sorry, I don't know where I picked it up): *SO GOOD Gluten-Free Matzo * While this is not quite like regular matzo, it tastes great and gives a gluten-free person the opportunity to participate in all parts of the Passover Seder. Preparation takes about 20 minutes including baking time. 1 cup Potato Starch 2/3 cup Almond Meal 2 Tbs. flax seed meal ½ tsp. Gluten-Free Pantry Xanthan Gum 1/2-3/4 teaspoon salt 4 Tbs. vegetable shortening, Earth’s Balance vegetable spread or solid coconut oil is the best 4-6 Tbs. warm water Preheat oven to 450°F. Line two wire racks with with parchment paper or coat them with coconut oil.. In a medium bowl, combine the dry ingredients. Mix shortening, vegetable spread, or coconut oil into the dry ingredients using two forks or your hands. Add water, a little bit at a time, until the dough forms a ball and isn't too sticky. Knead well, making sure there are no big chunks of shortening. If the dough is sticky, add additional potato starch. Break off walnut size (smaller is even nicer if you can do it) pieces and press into a disc with your fingers, and roll slowly and evenly until very thin. Smooth out edges with your fingers and use a fork to prick rows of holes if desired. Gently lay them on the prepared racks. Cook 7-9 minutes. Watch carefully to make sure they don't over bake. Edges should become slightly brown and the top should still be white. Makes 6-8 pieces --- It turned out I didn't have enough potato starch, since I was doubling the recipe, so I compensated with tapioca starch. As far as I can tell, tapioca starch is still kosher for passover, since it is a root vegetable like potato and not a grain (and I assume cassava was far more likely to be known and used in Egypt than potatoes!) Rather than rolling individual balls (and since we are sharing with a larger group) we cut them out like cookies. They were yummy and it was all I could do to limit the boys to two each so that we will have enough for our potluck on Friday. Made about 40 crackers when doubled and cut in about a 3 " circle.
