Oatmeal Rhubarb Crunch Bars 4 cups rhubarb, chopped 1/2 cup brown rice flour 1/2 cup white rice flour 1/2 cup garbanzo/fava flour 1 cup oats, gluten free 1 teaspoon cinnamon 1 1/2 cups brown sugar, packed 1/2 cup coconut oil, melted Chop rhubarb and set aside. In another bowl, mix together the flours, oats, cinnamon, brown sugar, and melted coconut oil. Press half the crumb mixture into a 8.5 " x 11 " baking dish. Then, place the following ingredients into a glass mixing bowl: 3/4 cup sugar 2 tsp. powdered stevia 2 tablespoons cornstarch 1 cup cold water Whisk ingredients together and then place in microwave. Microwave on high for 4 - 5 minutes. Remove from microwave and add: 1 teaspoon vanilla Add chopped rhubarb to crumb mixture. Pour the sugar/cornstarch sauce over the rhubarb.
