Guest guest Posted May 11, 2010 Report Share Posted May 11, 2010 Chickpea Patties 200 g (7 oz) plain soy yogurt 1 small Lebanese (Mediterranean) cucumber, chopped 8 teaspoons chopped mint 300 g sweet potato, peeled, chopped 2 teaspoons vegetable oil, plus extra, to shallow-fry 1 small white onion, finely chopped 1 clove garlic, crushed 1/4 cup mild curry paste two 400 g (14 oz) cans chickpeas, rinsed salt and pepper, to taste 1 cup dried GF breadcrumbs 8 teaspoons sesame seeds 1. Combine yogurt, cucumber and mint in a small bowl. 2. Using a fork, pierce sweet potato all over. Place in a microwave-safe bowl. Cover with damp paper towel; microwave on High (100%) for 3 minutes or until tender. 3. Heat oil in a small frying pan over moderate heat. Add onion; cook and stir for 5 minutes or until soft. 4. Add garlic and curry paste; cook and stir for 1 minute or until fragrant. 5. Place chickpeas in a food processor; process until chopped. Don't over-process; they should retain some texture. 6. Add onion mixture to chickpeas in food processor and process until combined. 7. Turn out into a large bowl and add sweet potato. Using a fork, mash and mix well. Season with salt and pepper. 8. Shape mixture into 8 patties, about 2 cm (3/4 " ) thick. 9. Combine breadcrumbs and sesame seeds. Coat patties with crumb mixture. Cover with plastic food wrap; chill for 15 minutes. 10. Heat extra oil in a large frying pan over moderately high heat. Cook patties for 1 to 2 minutes on each side or until golden brown. Drain on paper towels. 11.
