Guest guest Posted May 11, 2010 Report Share Posted May 11, 2010 Fruit Crumble --------------------------- Preparation: 10 minutes Cooking: 4 minutes --------------------------- cooking oil spray 410 g (14 1/2 oz) can pie fruit peaches diced 1/2 cup untoasted GF muesli 1/4 cup moist shredded coconut 8 teaspoons caster sugar 40 g (11/2 oz) vegan maragrine 1. Spray a shallow, 2-cup microwave-safe ceramic dish with oil. 2. Place peaches in prepared dish; smooth surface. 3. Combine muesli, coconut and sugar in a small bowl. Using fingertips, rub in margarine until combined. 4. Sprinkle muesli mixture evenly over peaches. 5. Microwave on High (100%) for 2 minutes or until hot. Microwave on Medium (50%) for 2 minutes more. Carefully remove from oven. Stand for 5 minutes before serving. TIP: Use certified GF rolled oats instead of muesli. You can use canned diced peaches instead of pie fruit peaches. NOTE: This crumble does not brown but topping will firm slightly on standing. Serves 2.
