Guest guest Posted May 14, 2010 Report Share Posted May 14, 2010 Superfast Tasty Veggie Pilaf 4 teaspoons olive oil 1 onion, chopped 1 teaspoons Moroccan seasoning 2 cups frozen mixed vegetables 450 g (16 oz) packet microwaveable brown rice 1/4 cup water 1/4 cup toasted slivered almonds 1/3 cup sultanas -OR- raisins 100 g (3 1/2 oz) grape tomatoes, sliced fresh coriander (cilantro) leaves, to serve extra toasted slivered almonds, to serve 1. Heat oil in a large saucepan on medium. Cook onion for 5 minutes, until soft. 2. Add spice mix and stir for 1 minute, until fragrant. 3. Add vegetables and cook for 3 to 5 minutess, until tender. 4. Stir through rice, water, almonds and sultanas and cook for 1 to 2 minutes to heat through. 5. Remove from heat and stir through tomato. 6.
