slim pickings

I was thinking that if I had to go out and forage for supper within a

mile radius-ignoring the local restaurants & markets & their dumpsters

what would I eat?

I have some basil & parsley

I could ask my neighbor if I could have/buy a tomato(he uses miracle gro)

 

I might have to resort to catching one of the squirrels but they have

been drinking the local coffee and are too fast :-)

 

There are some grapes.

 

Hydranges bushes all over...can a person eat those?

 

Also some edible flowers

 

We have a great many maple trees here but not the season.....

While I definitely understood the point of the post

about the squirrel and his coffee...........

 

it made me want to get some of my own....

 

i, too, am addicted. Like a little squirrel dragging

a coffee cup down the street....

Kerri this made me laugh out loud as I can visualize a person dragging the cup

down the street!

"Most restaurants fall way short of what we would call a delicious meal. We're really tired of being offered pasta marinara, a veggie burger that's not vegan, or worse, the 'healthy' steamed broccoli option," Zinaich said. "Instead of offering us a tasty, sumptuous meal, it's like they're just trying to appease us."

Healthy Dining Chicago recently published a list of vegetarian-friendly restaurants in the Chicago area, and other than chains such as Chipotle and Panera Bread, not one is located in the south suburbs.

The dirth is not lost on local vegetarians and vegans.

In her early days as a vegetarian/vegan, Zinaich was happy to be able to find anyhing on a menu she would eat, so she could still enjoy a meal out with friends or family.

"Today that attitude doesn't fly," she said. "Salad and a baked potato? We'll stay home."

The Zinaiches cook meals at home that they can't find at any nearby restaurant. Among their favorites are tofu-spinach quiche, wine-braised seitan braciole in the slow cooker, kickin' lentil chili, lemon-sesame linguine with Thai chili paste, or grilled potato salad with dill and vegan feta.

"Our cooking at home is way better. Vegan cooking is a labor of love for our family, for ethics, for the environment and health," she said.

"Mostly, we eat out for a break from this labor-intensive style of meal preparation. Still, I am particularly thankful for the wide availability of vegan meat alternatives, and, out of necessity, learning about the variety and use of spices in international cuisines, the use of fresh herbs, the subtleties of various oils, and the applications of alternative milk products and egg replacers, etc."

Their favorite place to dine is Bamboo Blue in Homewood.

"It's hard to choose a favorite dish. My husband loves the Chap Chae. I am torn between the Blue Buddha and Spicy Fun. Of course we order them with tofu (which the whole family loves). Our son has a great time eating the edemame and he even eats the Veggie Maki. A wonderful dish I recently discovered at Bamboo Blue is the Wok Seared Greens side dish. It's so rare to see greens on a menu (especially ones cooked without pig feet). They are delicious and healthy - full of calcium."

The couple also frequents the restaurant Eat Rice in Homewood. There they enjoy the brown rice, the spring rolls and the non-dairy smoothies. At Flossmoor Station, they like the Boca Burger, as well as the Burrito that Ate Flossmoor.

Marimonica Murray, of Crete, has been a vegetarian since 2000. She even wrote a research paper on identifying the typical vegetarian and--his or her demographics.

Her pick for best vegetarian restaurant in the area is Cilantro in Homewood.

"The food is delish and sensibly priced. The outdoor eating area is a haven, and the margaritas go down very well.--They have three kinds of menus: Meat eaters, Vegetarians, Vegans."

She also likes Taj Mahal in Orland Park because it offers lots of Middle Eastern foods that do not contain meat, although it does serve some meat items for those folks who prefer it.

"It's a fab dining experience all around. Linen naps and tablecloths. Sensibly priced as well," she said.

"I do not feel there are enough choices for the--vegetarian--mindset--in the south suburbs. I find that I have to travel to Evanston to--the Blind Faith Cafe on Dempster Avenue (extensive vegetarian and vegan items only) in order to eat safely without concerns or fears I'm eating suspect ingredients," she said.

Sharon Pedigo, of Tinley Park, agrees that vegetarian options are very limited in the south suburbs. When she does go out to eat, she opts for Ginger Asian Bistro in Orland Park or Dragon Palace in Tinley Park.

The staff at Dragon Palace is very good about helping vegans like her find something on the menu, she said.

"At Ginger Asian Bistro, they are willing to change sauces for vegetarians," she said.

Most days, Susan Zinaich makes her own vegetarian fare because dining-out options are so limited. Here's one of her favorite dishes.

Lemon-Sesame Linguine

We like this served warm or cold as a salad.

Dressing:

1/3cup tahini

3 Tbs. fresh lemon juice

3 Tbs. soy sauce

2 Tbs. fresh ginger*, minced

4 tsp. chile paste

4 cloves garlic, minced

1/4cup boiling water

16 oz Linguine (choose whole wheat pasta for a healthier option)

2 tsp toasted sesame oil

1/2cup parsley, chopped

1/2cup scallions, chopped

1. Cook pasta according to directions and drain. Rinse with cold water if serving as a salad.

2. While pasta is cooking, make dressing: Put first 6 dressing ingredients in a bowl. Add the boiling water last, and whisk until smooth.

3. Place cooked pasta in a bowl and drizzle with sesame oil. Add the dressing and mix well.

4. Toss in scallions and parsley.

*Be sure to cut across the fibers of this pungent root. In addition, fresh ginger works very well when peeled, frozen, and then chopped. Of course, freezing preserves the ginger for future use, and I find that it chops better when frozen (it chips off like a popsicle).
