The short answer to your specific question is " we don't really know " . Personally, I trust Dole's " organic " certification about enough to buy bananas from any other competitor I can find. Where did you get that term " sugar spots " ? Doesn't make sense to me. Anyway, hope some of these comments are helpful. Suggest reading from bottom, up. But it is on a very large scale, Laurie, and if they didn't encircle their organic crops, then the neighbor's crops would contaminate the organic crops with spray... B: Bananas will ripen at different rates due to a variety of conditions, including but not limited to: The temperature at which they are shipped The number of days on the vine before harvesting The density and duration of ethylene exposure Especially during each summer season you will notice that bananas seem to ripen earlier in their color cycle than at other times of year, due to exposure to heat.
