I know that for beats, a lot of the vitamin A (I think) is stored in the leaves, and so if you throw them out you miss out. Give them a try and see what you think, but in any case I don't think they have any toxins in them. - I just did a quick google search and nothing negative came up - in fact, lots of positive stuff came up, so juice away! I've always included them when juicing. But carrots are not among our species' ideal foods, they grow underground and are high in starches. Food for grubbers.
