Big smile at this one, Jeff. Thanks for clarifying the terminology!

 

As I understand it, we need not worry about an occasional high fat dish or

meal. The goal, in a low-fat, low-protein raw vegan program, is to eat that

way on a sustained basis, over time. So if I eat a high-fat dish one day, I

can simply follow with a couple of NOF (no overt fat) days.

 

For an athlete in training and others who are into very intense and

sustained physical activity, the high-fat dishes don't ever work

advantageously. But for everyone else, who engages in vigorous activity but

without any desire to be an Olympian, an occasional treat such as this can

be great fun!

Just to clarify, the (usually) clear liquid in a coconut is generally called

coconut " water " . Some may call it juice. Coconut " milk " is actually the

resulting liquid of blending the mature coconut " meat " and the water, then

juicing it, removing the fibrous material. The milk is an amazing rich

milky liquid, quite different from coconut water.

 

The young coconut meat can be used for puddings and sauces. It also makes a

great snack on its own (though Doug may not approve of the higher fat

content!)
