I HAVE heard of people who slice them, dehydrate them, then blend them and make a " mashed potato " dish, raw. TOO MUCH WORK, though. And I'm not sure how healthy it is. If you are going to do them, though, you should chunk them and then soak them overnight first. You will SEE the starch collect at the bottom of the bowl. I know people who swear by sweet potato soup to cure their insomnia from their fibromyalgia, etc. It's dates, sweet potatoes, pumpkin pie spice and pecans. Freakin AWESOME, too, btw.
