However, I usually go by the guidelines of the recipe. It is perfectly fine to soak them longer than the 6 hours, so you can do what is good for you. I think, since they are harder, it is good to soak them about 12 hours. Glad you're feeing better somewhat. Just expect running to the bathroom a lot. Also, just try to keep eating when you are hungry, but choose the highest quality foods if you can. So if the raw almonds you saw were harvested in the US then they were not really raw. Some companies have started importing raw almonds from other countries so make sure to check where they are coming from. Livingnutz.com for example has started selling raw almonds from Italy. It started Sept. 1 when a law went into effect that all raw almonds must be pasteurized and/or gassed with propylene oxide (that yummy antifreeze nutrient that we all love to eat!) They're doing this because there was two - TWO! - cases of salmonella because of raw almonds, traced to a NON-organic farm in Calif. Pasteurization is done at 158 degrees. Almonds can still be labeled " raw " , even though they are no longer raw. Try to find some that are labeled UNpasteurized and raw. I've heard they are available from Spain, but I don't know how or where to find them. As we all know, once something is pasteurized, there is hardly any more goodness left in the food, so they are no longer nutritious and are even probably dangerous with the propylene oxide residu. Blaire, Actually, we CAN get raw almonds in the US, grown in the US. We just cannot purchase them in stores or from other retail and wholesale companies in the US, Canada, and Mexico. At least not legally! As was mentioned, we CAN also buy non-pasteurized almonds from foreign countries, as well as from companies who have purchased almonds from other countries. This puts US growers at a disadvantage to farmers from other countries. As the chemical used in the gas version of pasteurization is banned in many countries, including the EU, local growers are put at an additional disadvantage. > As of September 1st raw almonds cannot be grown for sale on the US > None of the almonds grown in the USA are raw any longer. These two statements are not true. If your only shopping is from retailers, or even wholesalers, then you are not supposed to be able to purchase truly raw (unpasteurized) almonds. However, farmers ARE ALLOWED to sell unpasteurized almonds directly to consumers. They may sell them at roadside markets, as well as via phone orders, mail orders, and through internet sales. As Carol mentioned, the alleged reason for mandatory pasteurization was two cases of salmonella found in bulk conventional (non-organic) over the last six (6) years. One was in 2001 and one in 2004. There have never been any reported cases of salmonella from organic almonds, yet ALL almonds are subject to this ruling. While shelled almonds may be subject to the same ruling, the shell should protect them from heat, at least to some extent. I suspect the process is brief enough, so the heat should not affect the almonds inside. The gas, however, I am not so sure about. It's bad news! Other countries have banned the toxic chemical for a reason. The good news is that he has lowered his price to me a bit, so I'll be able to offer you a better price too. $10 per pound for unpasteurized, certified organic Nonpareils. The ordering database is still open and will remain so at least through the next week or two but sooner is better than later if you want to order or amend your existing order. Once you're at the home page, click on " databases " on the left. This will bring up the list of databases. Click on the one you want and then click " add record " .
