Take one head of lettuce and tear it into small pieces. Finely chop half a cucumber and mix it with the lettuce. Take 6 persimmons and (with your hands) squeeze their insides out onto the salad. Then use your (already sticky) fingers to mix the whole thing up. The persimmons make a delicious salad dressing! I ate this from a wooden plate with wooden chopsticks. It was very satisfying. They're on my list, but unfortunately, around these parts, that would be a $7 salad. Persimmons are $1/each, cucumbers 2/$1, and lettuce $1.29/head. They are almost 2 dollars each in Kansas (organic), with brown spots, and they are so small (a little bigger than a golf ball). I finally had one that I liked, but I wouldn't write home about it. My husband told me that a guy at work has a persimmon tree in Olathe (half hour from here). And, he noted that " they are always bitter. " I bet he's not waiting long enough for them to ripen. Sure of it, actually. Where do most of the trees grow and WHY are they so expensive? Or, is that just here in Kansas?
