Guest guest Posted November 4, 2003 Report Share Posted November 4, 2003 haha, I hadn't even noticed. I was obviously too caught up in the idea of making some soup. I'm always ver7y vague with recipes these days as I tend to cook from my head rather than a recipe so to speak, but here goes. For the potato and Leek, I usually use 1 leek and about 4 or 5 good sized potatoes. Chop the leek and fry it gently in a little oil just to sweat it a bit. Then add the potato. Make around 3/4 pint of veg stock and add that along with 1/4 pint soya milk to the potatoes and leek. Someone I know adds a little cream to his, but I prefer mine without. I love this recipe because its just so simple buts taste great! The veg one is a bit harder, jusrt because I can't really make this anymore. I don't know if its just a Northern #Ireland thing or not, but I used to be able to buy made up packets of soup vegetables, with leeks and parsley and things in. Don't seem to be able to find these in London. Which is a real shame because its the best comfort food I think. Sorry I couldn't help more with that one Jo. There's also a bit of a random hot and sour thing I make with broccolli, carrots and onions, which is just the veg chopped and added to a mixture of veg stock, soy sauce and chilli sauce. You need to keep tasting it along th way to suit how hot you like it. But thats a nice and simple one too.
