I pulled this off of vegsource.com the other day, so I haven't tried it yet. If

you try it, let me know how it goes.

Andi's Vegan Marshmallows

provided by Gail Davis

2 1/2 T. vegetable gelatin

(You can use Kojel unflavored gel available at: www.pangeaveg.com)

1 1/2 C. sugar

1 C. light corn syrup

1/2 C. cold water

1/2 C. water at room temperature

1/4 t. salt

2 T. vanilla extract (or flavoring of your choice)

Cornstarch for dusting

 

1. Combine Gel and 1/2 C. COLD water in the bowl of a mixer with a whisk

attachment. Let stand for 1/2 hour.

2. Mix the sugar, corn syrup, salt, and 1/2 C. water in a saucepan. Stir it over

low heat until the sugar is dissolved and a syrup has formed.

3. Cook it until firmball stage (244 degrees Fahrenheit on a candy thermometer.)

Remove pan from heat, and slowly and carefully pour the syrup into the

gelatin/water mixture in your mixer. Beat the mixture at high speed until thick,

white, and tripled in size, approximately 15 minutes. (If you stop before this

time, you will have marshmallow creme which you can store in a jar and use like

the commercial stuff.) Add the vanilla and beat just long enough to incorporate

it.

4. Dust an 8 " x 12 " glass baking pan with cornstarch. Pour mixture into pan, and

dust the top with more cornstarch. Wet your hands and pat the mixture to smooth

out the top. Dust again.

5. Let stand overnight to dry out, uncovered. Next morning turn the " marshmallow

cake " out onto a board, and cut in into small pieces with a dry, HOT knife. Dust

again. Makes about 45 marshmallows.

I was under the impression that Emes is gelatin. If that is *not*

the case, can somebody tell me what it *is*? I have never seen it

available here, but if I know that it is agar (or whatever), I may be able

to find a substitute. Thanks!

Hi, Brandel,

Regular gelatin is animal based, and has cow's hooves or something in

it. Emes is gelatin but is plant based. Egar Egar is a different

thickener altogether, but also plant based. You will get a different

result if you use one in place of the other. I use both for different

things. I use the agar for the cheese recipe I sent in and it makes a

nice slicing cheese to use with crackers or sandwiches etc.

Sure wish I could ship these products to you but am sure that it

wouldn't be allowed, particularly with the things that are going on in

our world today.

well...there are a couple brands of vegan marshmallows out there..but hard to find..try veganessentials

of course, you can always make REAL marshmallows...

i mean..marsh mallow is a plant fer bacchus' sake

but, ya can easily make marshmallows out of vegtable gelatin and sugar,,,

 

Andi's Vegan Marshmallows (from Andrea on VegList Digest)

2 1/2 T. vegetable gelatin (Emes Kosher Gel)

1 C. (237 ml) light corn syrup

1/2 C. (118 ml) cold water

1/2 C. (118 ml) water at room temperature

1/4 t. salt

2 T. vanilla extract (or flavoring of your choice)

Cornstarch for dusting

Let stand overnight to dry out, uncovered. Next morning turn the "marshmallow cake" out onto a board, and cut in into small pieces with a dry, HOT knife. Dust again. Makes about 45 marshmallows.

 

 

 

 

Vegan Marshmallow Treats!!!!!

 

Ingredients:

 

 

1 large package rice candy (check ingredients)

3 tbsp vegan margarine

rice krispies (or granola or other cereal) Directions: Rice candy looks and tastes like marshmallows and can be found at most oriental supermarkets. You can also use mochi with or without bean paste. Melt rice candy in saucepan over medium heat stirring constantly. add in margarine. remove from heat and stir in cereal. pour into a well greased pan. Let cool!

 

Enjoy!!!!!!

 

Serves: about 5

 

Preparation time: 10 minutes

Hi All

 

My colleagues at work eat all day - and are always sharing food. About half

of them are veggie, and two of those would-be vegan. Today one of the

non-veggie people bought in packs of cakes - chocolate covered marshmallow

on biscuit, which are not veggie. Does anyone know if there is anything

similar that is vegan?

I know at veganstore.com there are vegan marshmallows. So yes there is

something out there.
