I have another question for you all.

 

I have wanted to cut wheat (gluten) out of my diet for sometime now.

I have bad allergies and I've heard that cutting out gluten can be a

big help. Also it's just not good for you.

 

My big problem is that I LOVE to bake. Cookies, Cakes, Bread etc.

etc. Everyone says that I kick butt at it too, and the non-Vegans

can't even tell that they are all vegan.

I've known people who have tried to bake with rice flour and it

didn't turn out that great. I read in one of my vegan cookbooks,

that spelt flour is a good substitute. I even bought some to make

banana bread muffins last night and didn't dare to try it. I ended

up just using the wheat flour.

 

Do any of you know anything about wheat free baking? Which flour is

the best to use that wont sacrifice the quality of the item? Or

recipe's you might have tried or just advice on the issue.

 

My weakness is Sourdough bread. If I could figure out how to make my

own wheat free Sourdough, I'd be set. :D

I'm not trying to discourage you... But here is what I have learned...

Spelt really is the best substitute. This is because it is really

wheat, just an older less gluten-filled variety. We used it quite

successfully at the bakery in bread, etc.

The problem is that depending how allergic you are to gluten, you may

still not be able to use spelt. I hope you can, because I have got to

agree that cookies, etc. made with rice flour are just gross (IMO,

only), and I have tried tons.

I've not previously heard that gluten is generally not good for you.

Obviously if you have an allergy to gluten then it is, but otherwise...

 

As to your question... depends whether it's wheat or gluten that you have an

allergy to. If it's wheat, just start using spelt wheat instead of the

regular stuff - it's more natural, and often solves allergy problems for

people who can't eat the regular wheat.

We use spelt flour. I am not good with normal wheat. You can use spelt for

just about everything that normal flour is used for - pastry, bread,

pancakes, cakes (although a little heavier than white flour), biscuits etc.

I find I tolerate spelt very well, so haven't had to give up eating all the

goodies.

Here's a question: I've never really been clear on what spelt flour

is???? Please explain!

Ok, like I mentioned spelt is just an older variety of wheat. In

other words, it was developed by farmers longer ago. It is made into

flour just like " regular " wheat is -- by grinding it up. It can be

used just like other wheat flours. It has less gluten and is

therefore tolerated better than wheat by people allergic to gluten.
