It will probably be pretty hard to cook since we will just be unpacking. I wondered if anyone knows of some good places to eat there. Thanks so much for directing me to HappyCow. I looked up all the states we drove through and we ended up going to 2 fabulous places on our way to St. Paul. An awesome health food store with deli in Grand Junction, CO (Sundrop or somesuch) and a little cafe in Omaha, NE where I got these really wonderful blue corn pancakes and my friend got a tofu scramble with all these tasty greens. If anyone is ever in either of those cities, check those places out. Much better than any such store in Vegas. And Grand Junction is so much smaller! OK, except the strippers who are trying to keep trim and healthy... I think it helped when more Asian eateries started popping up in town. Also, even many of the taquerias have some sort of tasty veggie option now (although many of the " nicer " Mexican places don't). Even the local British pub has a home-made veggie burger.
