Guest guest Posted August 28, 2004 Report Share Posted August 28, 2004 For those who don't have " The Garden of Vegan, " it has a fantastic recipe for oatmeal chocolate chip cookies. I brought them into work yesterday and no one suspected they were vegan -- muhahaha 3/4 C flour 1/2 C dry sweetener 2 C oats 1/2 t baking powder 1/2 t baking soda 1/2 t salt 1/3 C soft tofu OR 1/2 banana 1/3 C olive oil 1/2 C maple syrup 1 T vanilla extract 1 1/2 C chocolate or carob chips Preheat oven to 350 F. Mix the dry ingredients. Blend the wet ingredients in a blender or food processor. Add the wet to dry and stir. Add chocolate chips. But I do have a question about the cookies : Which would you recommend for the recipe??? tofu or the banana??? I find subbing banana gives the baked goods a slight baked banana flavor which I do not like. The tofu has no flavor of its own, so I use that.
