i think they both add the same texture and moisture...depends on your taste; me, i wouldn't like banana flavoured

cookies =) the tofu would be more bland.

For those who don't have " The Garden of Vegan, " it has a fantastic

recipe for oatmeal chocolate chip cookies. I brought them into work

yesterday and no one suspected they were vegan -- muhahaha :)

3/4 C flour

1/2 C dry sweetener

2 C oats

1/2 t baking powder

1/2 t baking soda

1/2 t salt

1/3 C soft tofu OR 1/2 banana

1/3 C olive oil

1/2 C maple syrup

1 T vanilla extract

1 1/2 C chocolate or carob chips

Preheat oven to 350 F. Mix the dry ingredients. Blend the wet

ingredients in a blender or food processor. Add the wet to dry and

stir. Add chocolate chips. Spoon heaping tablespoons of dough onto

cookie sheet and flatten with fingers. Bake 12-15 minutes until edges

lightly browned.

Yum!

IMO, tofu. If you enjoy bananas, though, give that a try. I find

subbing banana gives the baked goods a slight baked banana flavor

which I do not like. The tofu has no flavor of its own, so I use that.

Also, I add some spices to this recipe such as cinnamin, nutmeg, etc.
