whole wheat flour ?

I had some whole wheat flour, maybe a year or more old....every loaf I tried

to make in my bread machine on dough setting was kaput. Does flour get old

and no good? I'm wondering if the bread machine's heat for the rise portion is

burned out. Any advice welcome....AmyF

As far as flour getting old, I honestly don't know but I get a much better whole

wheat loaf from my bread machine if I use vital wheat gluten (you add

approximately 1 T per cup of flour). It helps the bread to rise properly It

should be available where you'd find the flour.

I have heard the oils in whole wheat can get rancid.

Best to store in fridge or freezer if you expect to

have it kicking around for a while.

When you buy whole wheat flour, it should be put in the freezer and put back in

the freezer after everytime you use it. 100% whole wheat flour has the whole

wheat germ in it which will make the flour turn bad quickly. To get around this

I buy wheat and grind it myself when I want to use it.

Magic Mill for grinding all types of flour, it has been very realizable. To

buy wheat berries some health food stores will order the berries in bulk. To

make bread you need to order hard wheat like the Montana read berries. The

grocery store that is called Hy Vee sells Montana Red and they have wheat

grinders in their stores, a very nice feature. At least the one in Rochester,

Minn. does. Also any health food store around a Seventh-day Adventist College

will sell bulk wheat plus many other food items from Worthington or Loma Linda

brands, plus others. I hope this helps.
