Guest guest Posted September 30, 2006 Report Share Posted September 30, 2006 o my heavens is this a keeper!!! thanks, Chanda - angie00735 Friday, September 29, 2006 11:05 PM CREAM OF CAULIFLOWER SOUP CREAM OF CAULIFLOWER SOUP 4 tbs butter 1/4 cup flour 1 cup minced onions 1 tsp minced garlic 8 cups broth 1 large head cauliflower, washed and cut salt freshly ground black pepper 1/2 cup parmesan cheese 1 cup evaporated milk Melt butter in soup pot; add onions and garlic and sauté for 5 minutes until tender. Add flour and cook until smooth, do not brown, about 2 minutes. Add cauliflower cook for a few minutes, add broth. Salt and pepper. Bring to a boil, cover and simmer for 30 minutes. Guest guest Posted December 19, 2006 Report Share Posted December 19, 2006 CREAM OF CAULIFLOWER SOUP 2 Tbs butter, unsalted 1 large head of cauliflower, washed and cleaned cut into segments 1 large onion, chopped 1/2 cup chopped chives 6 cloves garic, chopped 2 potatoes, peeled and cut into quarters. Salt, black pepper to taste. 4 cups stock 1/2 cup evap milk 1/2 cup grated cheese. 1/2 tsp nutmeg Melt butter in a large soup pot, add onion, garlic and chives. Add cauliflower and potatoes, cook for a few mins. Add stock to pot with salt and pepper. Boil then simmer for 30 minutes. Puree soup. Finish by stirring in milk and cheese and nutmeg.
