I was thinking that essence was probably the same thing as extract but wanted to be sure. Is soya milk just regular soy milk or is it something different? And caster sugar? Hope this doesn't sound silly but I am a lil confused. I didn't want to royally mess up a good cake. Soya milk is what we call soy milk over here and caster sugar is superfine sugar. I would say that almond essence and extract are one and the same thing. I treated myself yesterday to another new vegan cookbook. It has the best looking chocolate cake recipe which I plan on trying tomorrow. The book is The Joy of Vegan Cookery by Amanda Grant. The chocolate raspberry hazelnut cake was pretty yummy although a bit too moist in the centre - not sure if that was to do with the recipe or with my oven. I shall make it again with a few alterations - for example it used soya milk and I thought that left a bit of an aftertaste so I shall try it with oat or rice milk next time.
