Guest guest Posted December 24, 2006 Report Share Posted December 24, 2006 Blessed Beltane, Merry Christmas and an all around Happy Holidays. Here is a recipe I made for our office potluck. This time didn't come home with too much left over (most of the folks in my office don't like what I bring to potlucks). 4 c stock 1 c yellow cornmeal 1 tsp salt 1-2 tbs butter 1/2 - 1 c soft cheese (cut up), such as havarti, soft cheddar etc Put stock, cornmeal and salt into large saucepan. Bring to boil on high heat, then immediately bring to simmer and cook until all liquid has absorbed, about 10-15 minutes. Remove from heat and add butter and cheese(s), stir until well incorporated. Line a deep cookie sheet, or equivalant with parchment paper and pour in mixture. Smooth out. Refrigerate at least one hour or overnight. Remove solidified polenta by grabbing sides of parchment paper. Cut into desired sized strips and bake or fry until crispy. Serve warm with marinara sauce.
