Tasmanian Parsnip Jam

1 1/2 lbs finely chopped parsnips

2 lemons, Juice and rind only

3lb sugar

2 pints water

 

 

Boil lemon, water and parsnips until tender

Add sugar and a pinch of salt and boil for ¾ hour or until set, then

bottle.
