Potatoes with peas

 

Servings: 4

 

Note: This is from the modern-day " Betty Crocker's Indian Home Cooking, "

with recipes by Raghavan Iyer.

 

Ingredients:

1 Tbsp. vegetable oil

1 tsp. cumin seed

1/2 cup finely chopped red onion

2 medium tomatoes, cut into 1-inch pieces (1 1/2 cups)

1 tsp. salt

1/2 tsp. cayenne pepper

1/4 tsp. ground turmeric

3 medium red-skinned potatoes, peeled, cooked and cut into 2-inch pieces (2

cups)

1 cup frozen green peas

1 cup water

2 Tbsps. finely chopped fresh cilantro

1/2 tsp. spicy garam masala (available in specialty stores and Indian

groceries)

 

1. Heat oil in 2-quart saucepan over medium-high heat. Add cumin; sizzle 15

to 30 seconds.

 

2. Add onion; stir-fry 1 to 2 minutes, or until golden brown. Stir in

tomatoes, salt, cayenne pepper and turmeric, and stir-fry 1 to 2 minutes, or

until tomatoes are softened.

 

3. Stir in potatoes, peas, water and cilantro. Heat to boiling; reduce heat

to medium. Cover and simmer 5 minutes. Uncover and simmer about 5 minutes

longer, or until sauce thickens slightly. Stir in spicy garam masala.
