Emma left for a few days to spend the holidays with her family out west, leaving poor daughter and me to fend for ourselves. The horror of it all. I made this yesterday, and it was pretty good. I used my new jar of better than bouillon that someone here in this group had endorsed, and this turned out very good. For the tofu: One block of extra firm tofu Shake and bake bbq flavor Olive oil Egg Garlic powder, about a tablespoon ketchup and brown sugar mixed about a half cup of ketchup to a quarter cup brown sugar For the broccoli Fresh broccoli (you could use frozen I imagine) Tamari sauce, about a half cup Wine, 1 bottle (about a quarter cup for the recipe, the rest for the chef) Sugar to taste, about two tablespoons or so Garlic powder, about a tablespoon About a half cup of water Better than bouillon vegetable flavor, about a teaspoon For the tofu: Freeze tofu ahead of time, and thaw. Squeeze out excess water and wrap in towel and weigh it down for about 15 minutes to remove as much moisture as possible. Cut in one inch pieces, put in a bowl and coat with olive oil. Do the shake and bake thing, and add some garlic powder to the mix, and put coated tofu squares on oiled cookie sheet and bake for about 5 or 10 minutes. Remove from oven and let cool. Scramble egg in bowl and coat tofu squares with egg. Do the shake and bake thing again. Bake for another 10 minutes or so at 350. remove from oven and coat with the ketchup brown sugar mix, and bake another 5 or 10 minutes or so. Then it is finally done! For the broccoli: Put about a half of a cup of water in the pot, and add the better then bouillon. Add the wine and tamari sauce and garlic powder and sugar, cover and simmer until desired doneness. I'm looking for new ways to cook tofu but what is shake and bake? I haven't heard of that here in the UK. Is there anything I could use in its place?
