There are not very many options for me at my school and so I tend to bring my lunch from home. I would love to hear some of your brilliant ideas on how you pack a meal! Drain and press the tofu, chop and mix it with Soyanaise or mayonaise and a little mustard. you can add pickles, etc. It's like egg salad, but without the stinky egg salad smell : ) Peanut butter in celery sticks is a good snack, I struggle with packing a lunch that won't leak all over my stuff because I have to carry it around campus all day! , " gabiwabirules " <gabiwabirules wrote: > > Hi, > > I'm having some trouble for new lunch options. Guest guest Posted January 3, 2007 Report Share Posted January 3, 2007 Leftovers from the your evening meal are great to take along. Take a Russet or sweet potato and microwave it. You could take small containers of Butter, Sour Cream, grated cheese, etc to add to it. Take a can of Campbell's Vegetarian Vegetable Soup or tomato soup, just add water heat up in a mug at work. Take along some Parmesan cheese in a baggie, Cheese -it crackers in Hot and Spicy flavor, a pinch of oregano to add to it. Yummmm. Make a sandwich spread out of mashed Worthington Vega-links and Mayo/Veganise, add some finely diced onions and celery if desired and take a sandwich to work. You can make a " Chicken " Spread using a food processor. Put in some drained pieces of Worthington Fri-Chick, a little bit of Cream Cheese, Mayo/Veganaise and process until fairly smooth. Stir in some diced celery, onions and pickle relish if desired. You can either take it and eat it with some saltines or spread on some good hearty bread. Take fresh orange slices, a can of mandarin oranges or pineapple and some cottage cheese. I love a bowl of freshly assembled salad bowl of pineapple tidbits, mandarin oranges sections, cottage cheese, sunflower seeds, almonds, pecans and raisins. Take all the ingredients in separate containers and mix together at lunch. Morning Star Farms has " chicken patties " , spicy black bean burgers, grillers, and lots more patties that you can either toast up in the oven or microwave them. They make excellent sandwiches on ww burger buns. I put my wet ingredients(lettuce, tomato slices, pickle slices, onions, green pepper rings) for the sandwich in a zip lock bag and add just before I eat the sandwich. You can pick up great Vegetarian luncheon " meat " slices at any Adventist Health food store. They are excellent for making hoagies/subsandwiches with. www.adventistbookcenter.com It isn't listed on their website, but you can click on the the store locator on the side bar and find a location near you. They have them at the store in a freezer. Here are the selections. They are all meat substitutes and are vegetarian. http://tinyurl.com/jsymy Fresh tossed salads, spinach salads or fruit salads are great. You can take along salad dressing, croutons, Baco Bits, saltines and grated cheese in separate containers to add just before you eat, so they don't get soggy. Snack size ziplock bags are great for this. Raw Veggie slices are great and some fresh fruit help round out your meals. V8 juice is nice to take for a healthy drink. Salt pepper to taste Throw all ingredients into pan with warm EVOO and saute until all ingredients are soft. Cool and put in fridge over night. Take mixture to work in a microwave safe container, heat and put into warm soft tortilla! Adding cheese is optional! Enjoy! I wrap up crackers and cheese, or Iw ill make a hoagie withor without cheese, veganaise, spices, oil, and lettuce and onion(tomatoes in baggie) I made zucchini balls and spaghetti last night, today I took a zucchini ball sandwich to work. You can also do the mock crab cakes made with zucchini and put on a roll with some tartar sauce. in a thermos you can put leftover stews and soups. An orange or a banana is a good thing to carry too.
