I'm always adding or changing things but this one is the one we like best. I hope you like it. I like strong flavours so I use a lot of tomato paste lol but if you don't like too much just fiddle around with the amounts to suit your taste 2 tablespoon Olive oil 1 Onion 1/2 Green Capsicum - cut into strips 3 Carrots - sliced 1 teaspoon Curry Powder 1/2 teaspoon Paprika Salt & Pepper 2-3 tablespoons Tomato Paste 1 cube of Vegetable Bouillon or " Chicken-like " Seasoning 500g Pasta - Any type will do, I use spiral pasta 1/4 white wine 240g Can Red Kidney Beans Serves 6 + In a large and deep saucepan, add olive oil and onion, Capsicum and carrots - cook (medium heat) until onions have turned transparent in colour. Add the spices and stir well, then add the tomato paste and Vegetable Bouillon cube(I usually dissolve the bouillon cube in a cup of hot water). Add the white wine, kidney beans and stir through. Add 3-4 cups of water, and then add the pasta. Cook on low heat until pasta is cooked through. Keep an eye on it as you will need to stir it occasionally and it may need more water or salt. I actually made it yesterday but forgot to keep an eye on the time... I would say it takes around 25mins all up but that's a rough guess. I have never written this recipe down before until now!! I am sure you were refering to the green bell pepper.... but in addition I will have to add at least one pring kee noo chili. I reckon adding chili would be fantastic! My husband loves the stuff so next time I make it, I'll be sure to try it with a bit of chili as well. Enjoy!
