What is agar-agar??

I have never heard of it?

So I'm guessing regular super markets/grocery stores don't carry it??

Only health food stores?

What does it come in and how much is it?

I've only found it in Health food stores and online.

 

It's interesting that it doesn't have to be refrigerated to congeal and stay

set.

Agar is an unbranched polysaccharide obtained from the cell walls of some

species of red algae or seaweed. The word agar comes from the Malay word

agar-agar (meaning jelly). It is also known as kanten or agal-agal (Ceylon

agar). Chemically, agar is a polymer made up of subunits of the sugar galactose.

Agar polysaccharides serve as the primary structural support for the algae's

cell walls. Dissolved in hot water and cooled, agar becomes gelatinous. Its

chief use is as a culture medium for microbiological work. Other uses are as a

laxative, a vegetarian gelatin substitute, a thickener for soups, in jellies,

ice cream and Japanese desserts such as anmitsu, as a clarifying agent in

brewing, and for paper sizing fabrics.

I agree, Agar agar is expensive in a health food

store, try hard to find it in an Asian market.

Eden seems to be the standard brand locally in health food stores

 

I am not sure as to how powder compairs to flakes as far as how much is

needer to be an equivelent of the other or the product's quality of one vs.

Yeah, Wild OAts didn't even have it, after someone on the phone told me they

did...no

Asian markets that I'm aware of here. May order it online.
