Guest guest Posted January 8, 2007 Report Share Posted January 8, 2007 Broccoli pie One or two broccoli trees One medium zucchini One and one-half cup shredded Italian cheeses including parmesan 2 tab flour---the pie still works if you forget it. 1/4 teas pepper 1 teas fresh basil 1/2 teas Italian seasoning 1/2 chopped green onions 1/4 cup butter melted plus a litte bit extra (I use an olive oil butter mix) One deep dish pie shell--store bought is fine. bowl of ice 1-Chop broccoli stems and then heads into pieces and cube the zucchini. Steam 3 mins. 2-Immediately place hot vegetables in a bowl on ice to cool. I turn them to make sure they cool evenly. 3-While vegetables cool, spread a small amount of oil/butter on pie shell, save the rest for later. 4-Combine all the other ingredients except the butter/oil and spread half on the bottom of the pie shell. 5-Put the broccoli zucchini mix on top. (I inadvertently got a little water in the veggies which I kept, so you might want to add a tablespoon or less of water to the veggies.) Save room for the topping. 6-Cover with the remaining cheese mix and top with butter/oil mix. 7-Bake at 350 for about 40 minutes. I have to admit I've tried rice bread and found it very crumbly. I did find a toast which was basically rice and egg whites that was delicious but unless you were dipping it in soup it was too tough to chew out right. Garbanzo bean, potato the mix that Red Mill makes is good for a pie crust. My cooking is so time intensive that I'd rather buy one pre-made at the store. I would combine some cooled rice with a couple of egg whites & maybe some shredded cheese then spread it in the bottom of the pie pan like a crust.
