Caribbean Black Bean and Rice Salad

 

2 c. cooked rice, cooled

1 can (15 1/2 oz) black beans, rinsed and drained

1 c. chopped red bell pepper

1/2 c. halved and thinly sliced radishes

1/2 c. matchstick carrots

1/2 c. lime juice

1/4 c. extra-virgin olive oil

1/4 c. chopped cilantro

1 clove garlic, minced

1 tsp. grated lime peel

1 tsp. salt

1/4 tsp. black pepper

1/8 tsp. red pepper flakes

 

Combine all ingredients in a medium bowl and toss gently to mix well. Serve

immediately.

oh a recipe with radishes... Yeah. Love those little red crunchie veggies.

This sounds like my kind of salad. Lots of CRUNCH. Hey wait a minute,,,, it is

missing a key ingredient, ONIONS... LOL
