Guest guest Posted January 9, 2007 Report Share Posted January 9, 2007 Hello, everyone! My New Year’s Resolution was to go [ovo-lacto] Vegetarian in the interest of simply eating healthier. It’s currently the 9th of January and I’ve not eaten any meat at all. I’m so pleased with myself. Problem is at my house there isn’t much to work with to make a meat-free meal; my family thinks I’ve fallen off my rocker for wanting to go vegetarian to begin with, so I don’t have much support over here and the groceries that come in aren’t always easy to make vegetarian meals with. I’ve been subsisting on meat-less spaghetti, macaroni and cheese, and peanut butter and jelly sandwiches, they aren’t bad, but aren’t exactly healthy. So, I’m looking for some good vegetarian recipes that I can make (probably just for myself) and maybe for my family once in a while. I look forward to participating in this group. Guest guest Posted January 10, 2007 Report Share Posted January 10, 2007 The primary reason people have failure of a vegetarian diet due to health reasons ( " I wasn't getting enough protein " , " I got anemic from insufficient iron " , etc) is because they don't eat a diverse enough diet. Therefore, your best bet is to make sure you get protein and vitamins from varying sources. Good protein sources are tofu, any kind of bean, seitan (this is my favorite), eggs, and dairy. Also, get as many different kinds of vegetables as you can...the more colors the better (good rule of thumb for varying kinds of vitamin sources). Seitan is basically wheat gluten and water. If you're allergic to wheat stay away from this one (you're probably not given the spaghetti and mac & cheese statements below). Also, this is the closest in consistency to meat. Great points, David. I've also heard former/lapsed vegetarians make the claim that they weren't getting enough protein, but what they were really craving were carbohydrates. Guest guest Posted January 10, 2007 Report Share Posted January 10, 2007 Not enough iron? *giggle* eat more dark green veggies... their loaded with iron more then meats me thinks. As for protines i am a little concerned about not getting enough but then we only need a small amount of it every day i think. 9 grams is it for a daily serving or is it two 9 gram servings? I find i dont really crave meats now that i drink more soy milk and eat tofu. Even fish (im a pescatarian) and seafoods i maby only want once or twice a week and im happy. Ive totaly been turned off of chicken and poultry after the show i watched last week. It was on discover health (how its made i think...) and they were showing how they seperate the empty egg shells and the baby chicks.... i was appauld, they took more care for the eggs then the chicks...
