Zucchini-Potato-Dill-Garlic Soup 4 cups water or stock 4 potaotes, peeled and sliced 1 carrot, chopped 10 large cloves garlic, minced 1 tsp basil, dried 2 medium zucchini, chopped 1/4 C minced fresh parsley or cilantro 2 TBl minced fresh dill weed (or 1 tbl dried) salt & pepper Place water, potatoes, carrots, onion, garlic and basil into soup pot and cook til potates are just about done. Add in the zucchini and heat through.
